Apricot Chia Seed Jam
This took me a couple of attempts to get right but I think you will enjoy the final recipe. It so quick to make and is great on pancakes, toast or in baking. It can also make a nice gift for someone.
Ingredients 5 apricots
2 tbsp. white chia seeds
¼ cup of water
2 tbsp. maple syrup ½ tbsp. vanilla essence

Method
Chop apricots into small pieces
Add apricots and water to a small pan and heat for approx. 5mins until the apricots become broken down
Add chia seeds, vanilla and maple syrup and stir
Return to heat for a further 5mins until mixture becomes thicker
Leave mixture to cool and to allow the chia seeds to do their magic
The jam will keep for 2 weeks in the fridge.
