Broccoli Rice

This is a great grain free option to add to your meals. It has become one of my staples as it is so quick, easy and versatile. Broccoli is a great source of vitamin K, which helps to strengthen our cognitive abilities, and it also contains the nutrient Choline, which has been found to improve memory.


Ingredients

1 head of broccoli

Olive oil

Salt & pepper

Mixed herbs (optional)


Method

Preheat oven to 220c

Cut the broccoli head into large florets

Cut the stem into chunks

Add to your food processor and pulse

Add the broccoli rice onto a baking sheet

Drizzle over olive oil

Season to taste

Roast in the oven for 10minutes, turning half way through

Serve warm
